On the Menu: Flat Bread

1 Chicken Breast (sliced up into strips)
1/2 a Red Onion cut into slices (Caramelized)
1/2 a Red Pepper (Roasted)
Spinach or Mixed Greens
2-4 Strips of Bacon
4 Ounces Goat Cheese
1-2 Flat Breads

Cut Onions and Chicken into strips. Cook in frying pan until chicken strips are cooked through and the onions are browned. Add some sugar to sweeten up your onions (1/2 teaspoon of sugar should be more than enough).

Put your red pepper in the oven at 350 for about 10-15 minutes. Check often and remove when the pepper is soft and the skin is starting to develop char marks. Cut your red pepper into slices.

Meat lover? Why not add some bacon! Cook in frying pan until crispy and then chop up into a crumble.

Fry the flat bread to crisp it up. Brush olive oil on both sides and put it in cast iron skillet (any pan will do). Just fry the flat bread long enough to get a crisp/brown exterior on both sides of the bread.

Now you have all the pieces you need to start your flat bread! Start by spreading a layer goat cheese on the flat bread, from there, spread out the chicken (and Bacon crumble if you so desire), onions and red pepper. Layer the spinach on top of that and finish with some more goat cheese. From there, set your ovens top burners to broil and place your constructed flat bread in. This will warm everything up, Crisp the bread further and start to melt the cheese.

Remove from oven and cut into portions so it can be easily picked up to enjoy.

Now you are ready to serve!
